Vangi-Bhaat

Ingredients For Vangi Bhaat Powder :

  1. Bengal gram – 1 tbsp
  2. White lentil – 1 tbsp
  3. Red chilies – 2
  4. Coriander seeds – 1 tbsp
  5. Black pepper corn – 1 tsp
  6. Cumin seeds – 1 tsp
  7. Grated coconut – 1/2 cup
  8. Asafetida – a pinch

Method :

  1. Dry roast all the ingredients except coconut till lentil turns golden brown.
    Now add coconut and sauté for a few seconds.
  2. Let the mix cool down completely and then coarsely grind it and keep it ready.

Main Preparation

Ingredients For Preparing Vangi Bhaat :

  1. Ramajeyam BPT / Sona Masoori – (Single Boiled (Puzhungal Arisi)/Raw Rice) – 1 cup
  2. Onion – 1 medium
  3. Brinjal – 3-4
  4. Vangi bhaat powder (see above)
  5. Turmeric powder – 1/4 tsp
  6. Salt to taste
  7. Mustard seeds – 1 tsp
  8. Cooking oil – 2 tsp
  9. Curry leaves – 1 sprig

Method :

  1. Soak rice in some water for 30 minutes and pressure cook with 2+1/2 cups of water. Spread the cooked rice in a plate and keep it aside.
  2. Add oil in a pan and when it’s warm, add mustard seeds.
  3. When the seeds crackle, add onions and curry leaves and sauté till onions turn golden brown.
  4. Add brinjal and sauté for few minutes till they are cooked and soft.
  5. Add Vangi bhaat powder, turmeric powder and mix well. Now add cooked rice and salt to taste and mix well and serve it hot with onion raita.
