malli-rice

Ingredients :

  1. Ramajeyam BPT / Sona Masoori – (Single Boiled (Puzhungal Arisi)/Raw Rice) – 1
  2. cup Coriander leaves – 1 cup
  3. 1 onion (peeled and finely chopped)
  4. Cumin seeds –1 tsp
  5. Bengal gram – 1 tsp
  6. Peanuts – 1 tsp
  7. Urad dal / white lentil – 1 tsp
  8. Red chilies – 2
  9. Chopped green chilies – 1 tsp
  10. Ginger – 1 tsp (finely chopped)
  11. Asafetida – 1/4 tsp
  12. Salt to taste
  13. Cooking oil – 1 tsp

Method :

  1. Soak rice in some water for 30 minutes. Pressure cook rice with 2+1/2 cups of water. Spread the cooked rice in a plate and keep it aside.
  2. Grind washed coriander leaves and green chilies to make a smooth paste. You can add little water while grinding.
  3. Heat oil in a pan; add cumin seeds and a pinch of asafetida and sauté till seeds crackle.
  4. Add bengal gram, peanuts, white lentil and roast it on low flame till lentils becomes slightly brown.
  5. Add red chilies, ginger, chopped onions and sauté till onion turn translucent.
  6. Lower the flame and add coriander paste.
  7. Add cooked rice and salt and mix it gently. Transfer in a bowl and serve with raita.
