Khara-Kuzhipaniyaram-Recipe

Ingredients:

  1. Dosa batter – 6 cups
  2. Salt as per taste
  3. Finely chopped onion – 1 cup
  4. Boiled sweet corn – 1 cup
  5. Mustard seeds – 2 tsp
  6. Channa dal / bengal gram – 1 tbsp
  7. Urad dal / white lentil – 1 tbsp
  8. Curry leaves – 2 sprigs
  9. 2 finely chopped green chillies
  10. Grated coconut – 1 cup
  11. Cooking oil (preferably sesame oil)

How To Prepare The Batter :

Ingredients:

  1. Idli rice – 4 cups
  2. Urad dal / white lentil – 1 cup
  3. Fenugreek seeds – 1 tsp
  4. Salt to taste

Method:

  1. Wash and soak the rice in a bowl with enough water for 4-5 hours..
  2. Wash and soak urad dal along with fenugreek seeds in a separate bowls for 4-5 hours..
  3. Firstly grind the soaked urad dal with enough water to make a smooth batter..
  4. Next grind the rice with enough water..
  5. Transfer the content in a pan and add some salt to taste and mix it well. If you feel the batter is too thick add some more water and keep it overnight for fermentation..
  6. Do not make the batter too thin. It should be of flowing consistency, not runny. Once the batter rises and it has fermented, you can use it to make Idli.
