Coconut-Rice-Recipe-New

Ingredients:

  1. Cooked plain rice – 3 cups
  2. Grated coconut – 3/4 cup
  3. Mustard seeds –1 tsp
  4. Channa dal / Bengal gram – 1 tbsp
  5. Urad dal/white lentil – 2 tsp
  6. Red chillies – 2
  7. Chopped green chillies -2 (finely chopped)
  8. Curry leaves – 1 sprig
  9. Ginger finely chopped – 1 tsp
  10. Asafoetida – 1/4 tsp
  11. Cashew nuts – 7-8
  12. Peanuts – 10-12
  13. Salt to taste
  14. Cooking oil / coconut oil – 1 tbsp

Method:

  1. Spread the cooked rice in a plate a and keep it aside.
  2. Heat oil in a pan and add mustard seeds and a pinch of asafoetida. When they crackle, add channa dal, urad dal, cashew nuts, peanuts and roast till it becomes slightly brown.
  3. Add red chillies, green chillies, ginger and curry leaves and sauté for a few seconds.
  4. Lower the flame and add grated coconut and sauté for a minute till it becomes slightly brown.
  5. Add cooked rice and salt and mix it well.
  6. Transfer it into a serving bowl/plate and serve it hot with some chips or papads or any side dish with gravy.
